Food Diary week so far.

I’ve been eating more than I did last week. Definitely don’t think I will have lost any weight this week. Got back into my routine today though and I plan on making another fruit smoothie for my lunch during Uni tomorrow.

Dinner on Monday was Enchiladas. We nearly used a whole packet of grated cheese in that one meal! When I cook for myself I tend to make healthier things but now my friend is back to living in the house properly we usually cook something together to “save” on ingredients but the meals we cook when eating together usually end up being more expensive than the random things I cook myself.

Tuesdays dinner was chicken curry and rice. It was whole grain rice but there was sooo much of it! I had only eaten breakfast before dinner so I was starving by the time food was ready, not a good way to be. Then as it was Pancake Tuesday we made pancakes. I had 2 completely covered in a combination of maple syrup, peanut butter, sugar and lemon juice. Calories galore no doubt but delicious.

Tonight I’m making us peppers, chicken, courgettes, baby tomato, spinach and pasta. So that will be lighter and healthier, I don’t plan on making much pasta.

Not managed any exercise other than a bunch of press ups now and again.
